Yerba Mate is made from the leaves of the Ilex paraguariensis plant, which undergoes under a meticulous processing in all the stages. The small, tender leaf is selected, then dries by using hot air to remove moisture, preventing fermentation and enhancing the flavor and aroma. In some cases, the leaves are roasted in ovens to achieve a stronger flavor. After a drying and roasting process, the leaves are ground either finely or coarsely and then packed in different packages and weights depending on a customer’s preference.
